Latkes (at last)

Enjoyed making a few latkes.  They are so easy to make and there are several variations.  I just use grated potatoes, egg and a little flour.  They can also be made gluten free using potato flour instead of regular flour.  Some people also choose to add some grated sweet potato.

Just a note:  the blocks above the oven spell “shefa” in Hebrew, which means “abundance”.
